Our Beef and Broccoli Stir-Fry is a quick and delicious meal that combines tender top sirloin filet with fresh broccoli and crisp carrots. It's all brought together by a mouthwatering stir-fry sauce, enhanced with the vibrant flavors of our homegrown microgreens. This recipe is ready in just 30 minutes and is perfect served over fluffy garlic butter rice.
Ingredients:
- 1 lb top sirloin filet, thinly sliced into bite-sized strips
- 2 Tbsp olive oil (or vegetable oil), divided
- 1/2 lb broccoli florets (about 3 cups)
- 1 cup carrots, sliced at an angle
- 1 1/2 cups uncooked white rice
- chicken broth (optional)
- 1 cup microgreens
Stir-Fry Sauce Ingredients:
- 1 tsp fresh ginger, grated (loosely packed)
- 2 tsp garlic, grated (from 3 cloves)
- 1/2 cup hot water
- 2 Tbsp general sauce
- 2 Tbsp stir-fry sauce
- 2 Tbsp spicy Szechuan sauce
- 3 Tbsp packed light brown sugar
- 1 1/2 Tbsp cornstarch
- 1/4 tsp black pepper
- 2 Tbsp sesame oil
Instructions:
Step 1: Prepare Your Rice- Start by cooking your rice first, ensuring it's ready when the stir-fry is done. This is how I make our fluffy garlic butter rice with a zesty kick:- While preparing the stir-fry, make your rice using a rice cooker. Use the appropriate amount of rice and water as per your rice cooker's instructions.
- To infuse extra flavor, add a small amount of butter, minced garlic, and a chopped-up garden salsa pepper to the rice cooker along with the rice and water. The exact amounts can vary based on your preference, but a tablespoon of butter and a clove of minced garlic should work well for 1 cup of rice.
- If you want to intensify the savory taste, replace some or all of the water with chicken stock. The ratio should typically be 1 cup of rice to 2 cups of liquid (water or chicken stock). Adjust according to your taste.
- Let the rice cooker do its magic, and your rice will come out fluffy, fragrant, and rich in flavor.
Step 3: Sauté Broccoli and Carrots- Place a large skillet over medium heat and add 1 Tbsp oil. Add the broccoli florets and carrots, and sauté for 4-5 minutes, partially covered with a lid. Stir or toss the vegetables several times until the broccoli becomes bright green and crisp-tender, and the carrots are cooked to your desired level of tenderness.
Step 4: Cook Beef- In a separate pan, turn the heat to high and add 1 Tbsp oil. Add the thinly sliced top sirloin filet in a single layer and sauté for 2 minutes per side or until cooked through. Quickly test a piece for doneness.
Step 3: Combine and Simmer- Add the prepared sauce to the skillet, reduce the heat to medium/low, and simmer for 3-4 minutes until it thickens. Stir in the sautéed broccoli, and carrots, mixing everything well. If desired, add 1-2 Tbsp of water to thin the sauce.
Serve: This delectable Beef and Broccoli Stir-Fry is best served over garlic butter rice that has a zesty kick and microgreens to garnish.
